I recall those too, but in fairness, the Penn Central did have a number of former "Congo Cars" with permanent set-ups at one end of the snack bar coaches offering "Hot-Cold Food and Beverages", on most of its "corridor trains".
In September 1971, I made a side trip from NYP to New Haven. On the return trip Amtrak had one of those cars as the food service. I had a chat with the woman running the snack bar and learned that she had been in charge of the Grill Car on the Yankee Clipper, supervising an all-woman crew. Now she was finishing out her career working alone with the new Amtrak. Her attitude was one of disappointment, but she was not letting the other customers know that.
