If I redeem points for a roomette, does the second person have to pay the ticket "coach" portion, or is the redemption good for the whole thing?

Quick answer, no!

A sleeper award (either for a Roomette, bedroom, family room or H room) includes the rail fare, room and meals for all passengers listed on that room reservation!
